It’s no secret that I love eggs in pretty much all of their forms. Once a picky kid, I’ve now acquired a must-try-once type of tongue. I also enjoy foods in all different temperatures and cooking variations which can make something as ordinary as an egg, pretty exciting.
This recipe is easy to make but will take a bit more time to prepare. The results are fantastic and worth it!
You’ll need a bowl for each yolk you will be making, so get those ready for separating, for example: 4 people – 4 eggs – 4 bowls with one yolk each. All of the egg whites can be placed in one medium bowl. Then whisk for a couple minutes with an electric mixer until they form stiff white peaks. Preheat your oven to 450° F.
Spray your baking sheet or use parchment paper to line the tray. Spoon your white fluffy mounds onto the sheet. Carefully scoop a yolk on the top of each cloud, it will have the appearance of a birds nest! At this point I like to season my eggs with a little pinch of onion or garlic powder and black pepper, but you can use salt if you prefer. Cook for 20 minutes. Garnish however you’d like — I usually put mine on a bed of spinach with some green onion or whatever I have in the fridge!
